Ingredients
- 1 Pound of Raw Jumbo Shrimp (16-20)
Flour Dredge
- 1 Cup / 120g Flour
- 1 Tbs / 14g Salt
- 1 Tbs / 8g Garlic Powder
- 1 Tbs / 8g Onion Powder
- 1 Tbs / 7g Black Pepper
- 1 Tbs / 6g Chili Powder
Egg Wash
- 3 Eggs
Coconut Panko Breading
- 1 Cup / 155g Panko Bread Crumbs
- 1 Cup / 80g Shredded Coconut
- 1 Bag of Coconut Curry Steak Chips
Directions
- Clean shrimp shells and de-poop them if need be. (Leave tails on)
- Rinse under cold water and place in bowl
- In a separate bowl add all flour dredge ingredients and mix well
- Crack 3 eggs in another bowl and mix until completely yellow (No egg white streaks)
- Blend bag of coconut Curry Steak Chips in food processor and make a fine steak powder.
- Incorporate Steak powder, Shredded coconut and Panko Bread Crumbs into another bowl...I know, Soo many bowls but its totally worth it.
- You should have 4 bowls. One with flour dredge, one with mixed eggs, one with coconut panko mix and one with your shrimp.
- Hold shrimp by tail and dust in flour dredge covering the whole shrimp
- Submerge in egg wash
- Coat in coconut mix
- Repeat steps with remaining shrimp
- Heat cooking oil to 350 degrees
- Fry shrimp for 3-4 minutes or until GBD, Golden Brown Delicious
- Enjoy with desired sauce.. I recommend a sweet chili sauce
