KFC aka Korean Fried Cauliflower from Gordon Ramsays Food Stars episode 6! If you saw that episode you know it was a hot mess and the only thing that wasn’t was these delicious Korean Cauliflower Cups that you can now make at home!
Ingredients
Batter
- 1/2 Head of Cauliflower cut into florets/bite size pieces
- 1/2 Cup/67g Corn Starch
- 1/2 Cup/75g All Purpose Flour
- 1/2 tsp/3g Baking Powder
- 1/2 Cup/120g Water
- 1/4 Cup Vodka
Glaze
- 4 whole or 14g Garlic Cloves (minced)
- 1/4 Cup/60g Soy Sauce
- 1/4 Cup/60g Mirin
- 2 Tbs/20g Brown Sugar
- 1 Tbs/7g Corn Starch
- 1 Tbs/13g Water
- 2 tsp/10g Gochujang
Garnish
- Lettuce for cups
- Sesame Seeds
- Julienne Carrots
- Green Onions
Directions
- Cut Cauliflower in half, cut into florets or bite size pieces.
- In a bowl, mix all ingredients for the batter until smooth and had no clumps
- Add cauliflower to wet batter. Be sure to cover all surface area of the cauliflower
- Pour frying oil in a pot and bring up to 350 degrees.
- Gently place battered cauliflower in oil and fry for 6-7 minutes or until GBD (Golden Brown Delicious)
- Take out and place on baking rack.
- In a sauce pan add all Glaze ingredients and cook for 1-2 minutes. Just until it starts to bubble and cut off the heat
- In a bowl pour the Glaze and add cauliflower, 5-6 pieces at a time not to over crowd the bowl.
- Grab a head of iceberg lettuce and peel off a few layers to use for cups.
- Place glazed up cauliflower in lettuce cup.
- Add Sesame seeds, Carrots and Scallions for garnish.
- BOOM!! KFC aka Korean Fried Cauliflower!
