Ingredients
- 2-3 large baking potatoes
- Pickled onions
- Chives, chopped
- Crumbled cotija cheese
- Shredded Cheese
- Soy Cream (see previous recipe)
- Lemon zest
- Sichuan Peppercorn Steak Chips
- Olive oil
- Salt
Directions
- Preheat oven to 380 degrees
- Use a fork to poke holes around the potatoes
- Lightly coat each potato with olive oil and sprinkle with salt generously
- Place potatoes on baking sheet and in oven for 50-55 minutes or until soft
- Pickled red onions recipe: 100g rice vinegar, 100g water, 10g salt, 20g sugar; mix until sugar and salt dissolve
- Slice half a red onion in strips and place in pickling liquid
- Make soy cream; see previous recipe
- Cut chives
- Zest lemon
- Remove potatoes when ready and preheat broiler
- Smash or cut the top of each potato per your preference
- Generously sprinkle shredded cheese on top of each potato
- Place potatoes in broiler until cheese melts
- Remove potatoes from broiler and off the baking sheet
- Assemble toppings; soy cream, pickled onions, cotija cheese, lemon zest, chives, and crumbled Steak Chips
